For your roasted chicken with potatoes to be perfect, use the ingredients listed below and follow the step-by-step instructions for preparation.

Ingredients

  • 1 medium onion cut into rings

  • 3 crushed garlic cloves

  • 1 tablespoon chopped coriander

  • 2 teaspoons of paprika

  • 1 tablespoon of salt

  • 1/2 teaspoon hot paprika or black pepper

  • 1 tsp smoked paprika (if not, use 1/2 tsp cumin)

  • 3 tablespoons of mayonnaise (you can replace it with 3 tablespoons of olive oil or butter)

  • 2kg chicken pieces (I used only the drumstick)

  • 1 medium onion in pieces

  • 3 medium potatoes cut into wedges

Directions

  • In a blender, add 1 medium onion cut into rings;
  • Beat until it becomes a paste;
  • Pass it through a sieve;
  • In a bowl, add 3 crushed garlic cloves;
  • Add 1 tablespoon chopped cilantro;
  • Add 2 teaspoons paprika;
  • Add 1 tablespoon salt;
  • Add 1/2 teaspoon hot paprika or black pepper;
  • Add 1 teaspoon smoked paprika (if not, use 1/2 teaspoon cumin);
  • Mix;
  • Add onion paste;
  • Mix;
  • Add 3 tablespoons of mayonnaise (you can replace it with 3 tablespoons of olive oil or butter);
  • Mix;
  • Pass the chicken (also season inside the skin);
  • Line the baking sheet with aluminum foil;
  • Add onion rings;
  • Add chicken pieces, skin side up;
  • Add the cut potatoes to the bowl where the seasoning was and pass them;
  • Place them on the baking sheet;
  • Cover with foil (shiny side down);
  • Take to preheated oven at 200 degrees for 40 minutes;
  • Remove the foil and leave in the oven until golden;
  • Your roast chicken with potatoes is ready!
