hourFor your roasted chicken with potatoes to be perfect, use the ingredients listed below and follow the step-by-step instructions for preparation.
Ingredients
1 medium onion cut into rings
3 crushed garlic cloves
1 tablespoon chopped coriander
2 teaspoons of paprika
1 tablespoon of salt
1/2 teaspoon hot paprika or black pepper
1 tsp smoked paprika (if not, use 1/2 tsp cumin)
3 tablespoons of mayonnaise (you can replace it with 3 tablespoons of olive oil or butter)
2kg chicken pieces (I used only the drumstick)
1 medium onion in pieces
3 medium potatoes cut into wedges
Directions
- In a blender, add 1 medium onion cut into rings;
- Beat until it becomes a paste;
- Pass it through a sieve;
- In a bowl, add 3 crushed garlic cloves;
- Add 1 tablespoon chopped cilantro;
- Add 2 teaspoons paprika;
- Add 1 tablespoon salt;
- Add 1/2 teaspoon hot paprika or black pepper;
- Add 1 teaspoon smoked paprika (if not, use 1/2 teaspoon cumin);
- Mix;
- Add onion paste;
- Mix;
- Add 3 tablespoons of mayonnaise (you can replace it with 3 tablespoons of olive oil or butter);
- Mix;
- Pass the chicken (also season inside the skin);
- Line the baking sheet with aluminum foil;
- Add onion rings;
- Add chicken pieces, skin side up;
- Add the cut potatoes to the bowl where the seasoning was and pass them;
- Place them on the baking sheet;
- Cover with foil (shiny side down);
- Take to preheated oven at 200 degrees for 40 minutes;
- Remove the foil and leave in the oven until golden;
- Your roast chicken with potatoes is ready!
