Ingredients
Filet mignon medallion – 4 units
Dijon Mustard – 2 tablespoons
Fresh cream – 500ml (1 bottle)
Garlic – 2 cloves
Salt to taste
Freshly ground black pepper – to taste
Extra virgin olive oil – 50 ml
Sage and thyme – to taste
Butter – 3 tablespoons
Directions
- Add 2 tablespoons olive oil or oil to a very hot skillet;
- Add Butter – 1 tbsp;
- Season the medallions with black pepper and salt (on both sides);
- As soon as the skillet starts to smoke, add the medallions and sear on all sides;
- Book the medallions;
- In the same skillet, add 2 tablespoons butter;
- Add Garlic – 2 minced cloves;
- Add sage and thyme – to taste;
- Add Dijon Mustard – 2 tbsp;
- Add fresh cream – 500ml (1 bottle);
- Add salt and black pepper;
