For your hummus to be very tasty and with a perfect texture, follow the step-by-step using the ingredients from the list below.

Ingredients

  • Chickpea preparation
  • Chickpeas 1/2 packet (250g)

  • Lemon or vinegar a few drops

  • Hummus
  • Cooked chick peas

  • Chickpea cooking water ¾ cup (180 mL)

  • Tahini 3 tbsp (45g)

  • Lemon Juice 1/4 cup (60 mL)

  • Garlic 1 large clove

  • Salt 1 ½ teaspoons (7g)

  • Olive oil to taste

  • Paprika or Sumac

Directions

  • In a bowl, add 1/2 packet (250g) chickpeas, washed;
  • Cover with water;
  • Add lemon or vinegar (a few drops);
  • Cover and soak for 8 to 12 hours in the refrigerator;
  • Transfer the grains to a pressure cooker;
  • Cover with water (2 to 3 fingers above the grains);
  • Take to the high fire and leave it in the pressure for 20 minutes;
  • Transfer chickpeas to a blender;
  • Add the cooking water;
  • Add Tahini 3 tbsp (45g);
  • Add 1/4 cup (60 mL) lemon juice;
  • Add Garlic 1 large clove;
  • Add Salt 1 ½ tsp (7g);
  • Beat well;
  • Transfer hummus to a container;
  • Add olive oil;
  • Add Paprika or Sumac;
  • Your Hummus (Chickpea Paste) is ready!
