Ingredients

  • 2 small eggplants or 1 large

  • 1/2 yellow bell pepper

  • 1/2 red bell pepper

  • 1 tomato

  • 1 onion

  • 1/2 cup black olives

  • 1/2 cup olive oil

  • 1/2 cup walnuts

  • Oregano to taste

  • Salt to taste

Directions

  • In a pan on the fire, add 1 strand of olive oil;
  • Add chopped onion;
  • Add minced garlic;
  • Sauté;
  • Add chopped peppers;
  • Let it braise;
  • Add the eggplants cut into slices;
  • Add diced tomato;
  • Add salt to taste;
  • Sauté;
  • Add the rest of the olive oil;
  • Add chopped olives;
  • Add oregano;
  • Add chopped walnuts;
