To make these simple, easy and quick American pancakes, you’ll need the ingredients listed below and follow the step-by-step preparation instructions.

Ingredients

  • 3/4 bottle of coconut milk (150 mL)

  • 1/2 teaspoon vanilla essence

  • 2 eggs

  • 100g of fresh mashed ricotta

  • 1 cup of wheat flour (120g)

  • 2 tablespoons of sugar (30g)

  • 1 teaspoon chemical yeast

  • 1/2 teaspoon bicarbonate of soda

  • 1 pinch of salt

  • 1 tablespoon butter (20g)

  • 100 ml of maple syrup or honey

  • 150g of strawberry

  • 25g blueberry

  • 25g of blackberry

Directions

  • In a bowl, add 3/4 bottle of coconut milk (150 mL);
  • Add 1/2 teaspoon vanilla essence;
  • Add 2 eggs;
  • Add 100g of fresh mashed ricotta;
  • Mix well;
  • Passing through a sieve, add 1 cup of wheat flour (120g);
  • Add 2 tablespoons of sugar (30g);
  • Add 1 teaspoon of chemical yeast;
  • Add 1 pinch of salt;
  • Add 1/2 teaspoon baking soda;
  • Mix well;
  • In a frying pan, add a little butter and spread it to grease;
  • Add 1 ladle of dough;
  • When you start bubbling, turn and leave for 2 minutes;
  • Stack pancakes on a plate;
  • Decorate with the fruits;
  • Add 100 ml of maple syrup or honey;
  • Your American pancake is ready!
