Ingredients

  • 500g boiled and mashed potatoes

  • 3 tablespoons of melted butter

  • 1/3 cup warm milk

  • 1 egg

  • 2 tablespoons of sugar

  • 1/2 tablespoon of salt

  • 1 packet (10g) of dry yeast

  • 5 cups wheat flour

  • 1/2 tablespoon olive oil

  • 300g of ground calabresa sausage

  • 6 tablespoons catupiry cottage cheese

  • 1 yolk

  • 1 tablespoon of milk

Directions

  • In a mixer with a hook (or even by hand), add the potato;
  • Add melted butter;
  • Add warm milk;
  • Add the egg;
  • Add sugar;
  • Add the yeast;
  • Beat well;
  • In a bowl, mix the salt into the flour;
  • Add slowly in the batter, while hitting;
  • Beat for 8 minutes;
  • In a bowl, add the olive oil;
  • Brush on the sides;
  • Add the dough;
  • Tampe with a cloth and leave in a warm environment in your home for 1 hour;
  • Mix the pepperoni with the cottage cheese in a bowl;
  • In another bowl, combine yolk and milk;
  • Flour your countertop and place your dough;
  • Cut into pieces;
  • Make a ball with the dough and open;
  • Add the stuffing;
  • Close the bun;
  • Transfer to a baking sheet and cover with a cloth;
  • Let it rest for another 30 minutes;
  • Brush the yolk with milk on the pasta;
  • Take to preheated oven for approximately 30 minutes;
