Ingredients

  • 2 cups of cooked rice

  • 2 eggs

  • 1 grated carrot

  • 1 small onion, chopped

  • 1 garlic clove, minced

  • 2 tablespoons of olive oil

  • Seasonings to taste (salt, pepper, ginger)

Directions

  • In a pan, saute onion and garlic in olive oil until soft.
  • Add the grated carrot and cook for a few more minutes.
  • Add cooked rice and mix well.
  • Season with spices to taste.
  • In a frying pan, fry an egg and place it over the rice.
  • Serve it hot.

Notes
