Ingredients

  • 1 cooked and shredded chicken breast (+or- 500g)

  • 26 ml of oil (2 tablespoons)

  • 2 chopped onions

  • 1 teaspoon Colorific

  • Salt to taste

  • 10g chopped parsley and chives (2 tablespoons)

  • 240 ml of milk (1 cup)

  • 480 mL chicken cooking water (2 cups)

  • Salt to taste

  • 60g butter (3 tablespoons)

  • 360 g of wheat flour (3 cups)

  • 240 mL of Water (1 cup)

  • 20g cornstarch (1 tablespoon)

  • 180g breadcrumbs (1 and 1/2 cup)

Directions

  • In a pressure cooker, add 1 cooked and shredded chicken breast (+or- 500g);
  • Add 1 chopped onion;
  • Add 5g of chopped parsley and chives (1 tablespoon);
  • Cover with water and leave under pressure for 25 minutes;
  • Reserve the water;
  • Shake the pan to shred the chicken;
  • In a pan, add 26 mL of oil (2 tablespoons);
  • Add 1 chopped onion;
  • Let it gold and add the shredded chicken;
  • Add 1 tsp Colorific;
  • Add salt to taste;
  • Mix;
  • Add 5g of chopped parsley and chives (1 tablespoon);
  • In a pan, add 480 mL of Chicken cooking water (2 cups);
  • Add 240 mL milk (1 cup);
  • Add 60g of butter (3 tablespoons);
  • Add salt to taste;
  • Take to the high fire and mix;
  • When it starts to boil, lower the heat and add 360 g of wheat flour (3 cups);
  • Mix in medium fire until the mass is homogeneous;
  • Transfer the dough to a clean surface and lightly knead until smooth.
  • Involve the dough in plastic film and let it rest;
  • Mold and stuff the coxinhas;
  • Mix 20g of cornstarch (1 tablespoon) in 240 mL of water (1 cup);
  • Dip the drumsticks in this mixture and roll in 180g of breadcrumbs (1 and 1/2 cups);
  • Fry in hot oil until golden;
  • Dry on paper towels;
  • Your Chicken Coxinha is ready!
