500g cheese (250g emmental and 250g gruyere)
50g parmesan cheese
1 tablespoon of corn starch
3 cloves of garlic
3 glasses of dry white wine (600ml)
1/2 onion or 4 pearl onions
Thyme
black pepper
Allspice
blonde
Nutmeg
Directions
- In a pan over low heat, add 3 glasses of dry white wine (600ml);
- Add thyme, bay leaf, 2 crushed garlic cloves, 1/2 onion or 4 pearl onions, black pepper and allspice;
- Let it reduce by half;
- Grate the cheeses;
- Transfer cheeses to a bowl;
- Add 1 tablespoon cornstarch;
- Mix well;
- Sift the wine into a pan on the fire;
- Add the cheeses little by little while mixing, until melted;
- Add grated nutmeg;
- Transfer to the fondue apparatus;
- Your cheese fondue is ready!
