Ingredients
1 cooked and shredded chicken breast (+or- 500g)
26 ml of oil (2 tablespoons)
2 chopped onions
1 teaspoon Colorific
Salt to taste
10g chopped parsley and chives (2 tablespoons)
240 ml of milk (1 cup)
480 mL chicken cooking water (2 cups)
Salt to taste
60g butter (3 tablespoons)
360 g of wheat flour (3 cups)
240 mL of Water (1 cup)
20g cornstarch (1 tablespoon)
180g breadcrumbs (1 and 1/2 cup)
Directions
- In a pressure cooker, add 1 cooked and shredded chicken breast (+or- 500g);
- Add 1 chopped onion;
- Add 5g of chopped parsley and chives (1 tablespoon);
- Cover with water and leave under pressure for 25 minutes;
- Reserve the water;
- Shake the pan to shred the chicken;
- In a pan, add 26 mL of oil (2 tablespoons);
- Add 1 chopped onion;
- Let it gold and add the shredded chicken;
- Add 1 tsp Colorific;
- Add salt to taste;
- Mix;
- Add 5g of chopped parsley and chives (1 tablespoon);
- In a pan, add 480 mL of Chicken cooking water (2 cups);
- Add 240 mL milk (1 cup);
- Add 60g of butter (3 tablespoons);
- Add salt to taste;
- Take to the high fire and mix;
- When it starts to boil, lower the heat and add 360 g of wheat flour (3 cups);
- Mix in medium fire until the mass is homogeneous;
- Transfer the dough to a clean surface and lightly knead until smooth.
- Involve the dough in plastic film and let it rest;
- Mold and stuff the coxinhas;
- Mix 20g of cornstarch (1 tablespoon) in 240 mL of water (1 cup);
- Dip the drumsticks in this mixture and roll in 180g of breadcrumbs (1 and 1/2 cups);
- Fry in hot oil until golden;
- Dry on paper towels;
