Ingredients

  • 180 grams of Moroccan couscous (1 cup)

  • 240 grams filtered water or vegetable broth or unsalted chicken broth (240 ml | 1 cup)

  • 15 grams unsalted butter (1 tablespoon)

  • 14 grams of olive oil (1 tablespoon)

  • 3 grams of salt (1/2 teaspoon)

  • 500 grams of onions (about 3 medium onions)

  • 50 grams of light raisins (1/3 cup)

  • 15 grams unsalted butter (1 tablespoon)

  • 14 grams of olive oil (1 tablespoon)

  • 3 grams of salt (1/2 teaspoon)

  • 1 gram of cinnamon powder (1/2 teaspoon)

  • 0.5 gram black pepper/black pepper (1/4 teaspoon)

  • Turmeric/turmeric (1/8 tsp)

  • 15 grams of honey (1 tablespoon)

Directions

  • In a pan on the fire, add 240 grams of filtered water or vegetable broth or unsalted chicken broth (240 ml | 1 cup);
  • Add 15 grams of unsalted butter (1 tablespoon);
  • Add 14 grams of olive oil (1 tablespoon);
  • Add 3 grams of salt (1/2 teaspoon);
  • Mix;
  • Once it starts to boil, turn off the heat;
  • Add 180 grams of Moroccan couscous (1 cup);
  • Mix gently;
  • Cover and let rest for 5 minutes;
  • Mix well;
  • Cut the onions into thin slices;
  • In a pan, add 1 tablespoon of olive oil;
  • Add 1 tablespoon of butter and wait for it to melt and foam;
  • Add the onion;
  • Mix, cover and leave for 5 minutes;
  • Mix;
  • Add 50 grams of clear raisins (1/3 cup);
  • Add half a teaspoon of salt;
  • Add 1 gram of ground cinnamon (1/2 tsp);
  • Add 0.5 gram black pepper/black pepper (1/4 tsp);
  • Add turmeric/turmeric (1/8 tsp);
  • Add 15 grams of honey (1 tablespoon);
  • Mix well;
  • Push onion to one side of skillet;
  • Add water to the bottom of the skillet;
  • Mix and let cook for 40 or 50 minutes (until golden well);
  • Your Moroccan Couscous with Caramelized Onion (Tfaya) is ready!
