Ingredients
2 tablespoons of olive oil
1 medium chopped onion
2 minced garlic cloves
2 medium carrots, peeled and cut into rounds
2 medium potatoes, peeled and diced
2 chopped celery stalks
1 medium zucchini, cut into cubes
1 cup green beans cut into small pieces
4 cups of vegetable broth
1 cup of water
Salt and pepper to taste
Fresh basil leaves (optional, for garnish)
1 teaspoon dry seasoning (such as oregano, thyme, parsley, etc.)
Directions
- Heat the oil in a large pan over medium heat.
- Add chopped onion and chopped garlic.
- Saute for a few minutes until soft and lightly golden.
- Add the carrots, potatoes, celery, zucchini and green beans to the pot.
- Saute for a few more minutes, stirring occasionally.
- Add the vegetable broth and water to the pan.
- Season with salt, pepper and dry seasonings.
Shake well. - Bring the soup to a boil, then reduce the heat to medium-low.
- Cook for about 20-25 minutes, or until the vegetables are tender.
- When the vegetables are cooked, remove the pan from the heat and wait for it to cool down a bit.
- Use a hand mixer or blender to puree the soup to a creamy consistency.
- If you prefer, leave a few pieces of vegetables whole for a more rustic texture.
- Warm the soup again before serving.
- Serve the vegetable soup hot, garnished with fresh basil leaves on top, if desired.
