Paella Valenciana is a typical recipe from the Valencia region of Spain and is a very popular dish throughout the country.

Ingredients

  • 1 cup rice bomb

  • 1/2 cup olive oil

  • 1 large onion, chopped

  • 2 garlic cloves, minced

  • 1 ripe tomato, chopped

  • 1/2 cup frozen peas

  • 1 cup cooked chicken, shredded

  • 1 cup cooked shrimp

  • 1 cup mixed seafood (optional)

  • 2 cups of chicken broth

  • 1 tablespoon saffron

  • Salt and pepper to taste

  • Fresh parsley leaves to garnish

Directions

  • In a large pan, heat the olive oil over medium heat.
  • Add the onion, garlic and tomato and sauté until soft.
  • Add the peas, chicken, shrimp and seafood (if using) and mix well.
  • Add the rice to the pan and mix well with the other ingredients.
  • Add the chicken broth, saffron, salt and pepper and mix again.
  • Let the paella cook over medium heat for about 20-25 minutes, or until the rice is tender and the broth is absorbed.
  • When ready, turn off the heat and let it rest for a few minutes before serving.
  • Garnish with fresh parsley leaves and serve hot.
