
The terry towel cake is a traditional Brazilian cake, made with sponge cake dough and covered in a syrup of condensed milk and grated coconut. The name “fluffy towel” comes from the texture of the cake, which is very wet and velvety after being dipped in the syrup.

Ingredients
150 g of butter
2 cups of sugar (tea)
4 eggs
2 cups (tea) of wheat flour
1 tablespoon of baking powder
1/2 cup (tea) milk
1 glass of coconut milk (200 ml)
Butter for greasing
Shredded coconut for sprinkling
Directions
- Preheat the oven to 180°C.
Grease and flour a 24 cm round cake pan. - In a mixer, beat the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- In a bowl, mix the wheat flour and baking powder.
Add to the mixer mixture, alternating with the milk, until a homogeneous mass is formed. - Pour the batter into the prepared pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake bakes, prepare the syrup.
In a pan, mix the condensed milk, coconut milk and grated coconut.
Cook over medium heat, stirring constantly, until it thickens. - Remove the cake from the oven and let it cool for a few minutes.
Pierce the surface of the cake with a fork and drizzle with the still hot syrup.
Sprinkle with grated coconut and serve next.
Notes
- For an even tastier cake, use homemade condensed milk.
- If you want, add 100 g of powdered milk to the syrup.
- For a prettier finish, sprinkle the cake with grated coconut before serving.
