Tacos al Pastor Mexican recipe

Tacos al Pastor is a traditional Mexican dish consisting of pork meat roasted on wooden skewers, like those used for shawarma. The meat is marinated with a mixture of spices, lemon juice and other ingredients such as peppers and onions, and is usually cooked with pineapple slices.

Tacos are served with corn tortillas and are usually accompanied by onions, cilantro and salsa. 
It is a popular street food option and one of the main specialties of Mexican cuisine.

Ingredients

  • 1 kg pork loin cut into small cubes

  • 2 tablespoons of olive oil

  • 2 teaspoons cumin powder

  • 2 teaspoons coriander powder

  • 1 teaspoon ground pepper powder

  • 1 teaspoon powdered cloves

  • 1 teaspoon cinnamon powder

  • 1 teaspoon paprika

  • Juice of 2 lemons

  • 8 corn tortillas

Directions

  • In a bowl, mix the pork cubes with olive oil, cumin, coriander, black pepper, cloves, cinnamon and paprika.
  • Add lemon juice and mix well. 
    Let it marinate for at least 30 minutes.
  • Heat a frying pan and add the marinated pork cubes.
  • Cook for about 10 minutes, stirring occasionally.
  • Warm the corn tortillas.
  • Wrap the cooked pork in tortillas and serve with onions, cilantro and parsley to taste.
