Ingredients
2 cups cooked and mashed sweet potatoes
3 eggs
1 cup vegetable oil
2 cups of sugar
3 cups of wheat flour
1 tablespoon baking powder
1 teaspoon of cinnamon powder
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup chopped walnuts or chestnuts (optional)
Directions
- Preheat the oven to 180°C.
- Grease and flour a cake pan.
- In a large bowl, mix the mashed sweet potatoes, eggs, oil and sugar.
- Stir well until you obtain a homogeneous mixture.
- In another bowl, sift the wheat flour, baking powder, cinnamon, nutmeg and salt.
- Gradually add the dry ingredients to the sweet potato mixture, stirring well to combine.
- If desired, add chopped walnuts or chestnuts to the dough and mix.
- Pour the batter into the prepared pan and smooth the surface.
- Bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
