Ingredients
1 whole egg
1 pinch of salt
1 cup grated raw sweet potato
1/2 tablespoon baking powder
3 tablespoons grated coconut
3 tablespoons cornstarch
5 tablespoons demerara sugar
40 ml of oil
100 ml of coconut milk
Directions
- Place the egg, oil, sugar, coconut milk, corn starch in a bowl and mix well.
- Add the salt, the grated coconut, the grated raw sweet potato and mix.Â
Add the baking soda and stir to homogenize. - Transfer all the dough to a greased baking sheet with butter or margarine and sprinkled with cornstarch.
- Take the cake to bake for approximately 40 minutes in a preheated oven at 180º₢.
- Wait for the cake to cool and unfold on a platter or plate.Â
Cut as you like and the sweet potato cake is ready.
