Sweet couscous is a dish made with tapioca, a type of granulated cassava flour.
The tapioca is mixed with milk, sugar and grated coconut, and then left to rest for a few minutes.
During this time, the tapioca absorbs the liquid and forms a creamy, fluffy cake.

2 cups of sugar
1 cup grated coconut
Condensed milk to taste
Directions
- In a large bowl, mix the tapioca and sugar.
- In a pan, heat the milk until it boils.
- Pour the boiling milk over the tapioca and sugar mixture, stirring constantly until the tapioca starts to form a dough.
- Add the grated coconut and mix until smooth.
- Pour the dough into a pan greased with butter or oil.
- Cover the pan with a clean cloth and let it rest for 30 minutes.
- Unmold the couscous and serve with condensed milk to taste.
