Sweet couscous is a dish made with tapioca, a type of granulated cassava flour. 
The tapioca is mixed with milk, sugar and grated coconut, and then left to rest for a few minutes. 
During this time, the tapioca absorbs the liquid and forms a creamy, fluffy cake.

Ingredients

  • 500g granulated tapioca

  • 1 liter of whole milk

  • 2 cups of sugar

  • 1 cup grated coconut

  • Condensed milk to taste

Directions

  • In a large bowl, mix the tapioca and sugar.
  • In a pan, heat the milk until it boils.
  • Pour the boiling milk over the tapioca and sugar mixture, stirring constantly until the tapioca starts to form a dough.
  • Add the grated coconut and mix until smooth.
  • Pour the dough into a pan greased with butter or oil.
  • Cover the pan with a clean cloth and let it rest for 30 minutes.
  • Unmold the couscous and serve with condensed milk to taste.
