Vaca atolada is a traditional dish of Brazilian cuisine, especially popular in the interior regions of the country. 
It is a beef stew with cassava, which results in a tasty and comforting preparation. 
Below is a basic recipe for swamped cow:

Ingredients

  • 1 kg of beef ribs (can be ribs or ribs)

  • 1 kg cassava (cassava or cassava), peeled and cut into medium pieces

  • 2 medium chopped onions

  • 4 minced garlic cloves

  • 2 chopped tomatoes

  • 2 liters of water

  • 2 tablespoons of vegetable oil

  • Salt and pepper to taste

  • Chopped parsley (parsley and chives) to finish

Directions

  • In a pressure cooker, heat the oil and sauté the onion and garlic until golden.
  • Add the rib meat and sauté it until browned on all sides.
  • Add the chopped tomatoes and saute for a few more minutes until they start to soften.
  • Add the cassava cut into pieces, water, salt and pepper.
  • Cover the pressure cooker and cook over medium-high heat for about 25 to 30 minutes after the pressure cooker starts to pressurize.
  • Time may vary depending on the brand of pan and the thickness of the cassava.
  • After the cooking time, turn off the heat and wait for the pressure to naturally come out of the pan.
  • Open the pan and check if the meat and cassava are soft. 
    If necessary, cook for a few more minutes without pressure until they are at the desired point.
  • Finish with chopped green smell on top.
