Sponge Cake

Sponge cake is a light and fluffy pastry, perfect for birthday cakes, wedding cakes and other types of decorated cakes. It is made with eggs, sugar, wheat flour, baking powder and, in some cases, other ingredients such as milk, oil or vanilla essence.

Sponge cake is a very versatile dough that can be used in different recipes. 
It can be served plain, with chocolate topping, whipped cream or fruit. 
It can also be used to make filled cakes, such as roll cakes, wedding cakes or party cakes.

Ingredients

  • 5 eggs

  • 2 cups of sugar

  • 3 cups of wheat flour

  • 1 tablespoon baking powder

  • 1 cup of warm milk

  • 1 tablespoon vanilla essence (optional)

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a round or rectangular cake pan.
  • Using a mixer, beat the egg whites until stiff. 
    Reserve.
  • In the same mixer, beat the egg yolks and sugar until it forms a fluffy cream.
  • Add the wheat flour and baking powder and mix gently until smooth.
  • Add the warm milk and vanilla essence and mix again.
  • Finally, add the egg whites and mix gently, from bottom to top, so as not to break up the egg whites.
  • Pour the batter into the prepared pan and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before unmolding.
