Ingredients
200 g of spaghetti
4 eggs
100 g grated pecorino romano cheese
100 g of guanciale (or bacon)
Ground black pepper to taste
Salt to taste
Directions
- Cook the spaghetti in salted water until al dente, about 8-10 minutes.
- Reserve 1 cup of cooking water.
- Cut the guanciale into small cubes and fry in a large pan until crispy.
- Remove excess fat with a paper towel.
- In a large bowl, whisk together the eggs, pecorino cheese, black pepper and a pinch of salt until smooth.
- Add the cooked spaghetti and reserved water to the pot with the guanciale and mix well.
- Add the egg mixture and stir quickly so the heat from the pasta cooks the eggs into a creamy sauce.
- Serve hot, sprinkled with more grated cheese and black pepper to taste.
