Make this Spaghetti Carbonara using the ingredients from the list below following the cooking instructions below.

Ingredients

  • 200 g of spaghetti

  • 4 eggs

  • 100 g grated pecorino romano cheese

  • 100 g of guanciale (or bacon)

  • Ground black pepper to taste

  • Salt to taste

Directions

  • Cook the spaghetti in salted water until al dente, about 8-10 minutes.
  • Reserve 1 cup of cooking water.
  • Cut the guanciale into small cubes and fry in a large pan until crispy.
  • Remove excess fat with a paper towel.
  • In a large bowl, whisk together the eggs, pecorino cheese, black pepper and a pinch of salt until smooth.
  • Add the cooked spaghetti and reserved water to the pot with the guanciale and mix well.
  • Add the egg mixture and stir quickly so the heat from the pasta cooks the eggs into a creamy sauce.
  • Serve hot, sprinkled with more grated cheese and black pepper to taste.
