Ingredients
2 cups of cornmeal
1 cup of wheat flour
1 cup of sugar
1 tablespoon baking powder
3 eggs
1 cup of milk
1/2 cup of oil
Directions
- Preheat the oven to 180°C (350°F).
- Grease and flour a 23cm (9 inch) cake tin.
- In a large bowl, mix the cornmeal, wheat flour and baking powder.
- In another bowl, mix the sugar, oil, milk and eggs.
- Pour the liquid ingredients over the dry ingredients and mix until well combined.
- Do not overmix.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before unmolding.
Notes
- For a fluffier cake, use fine cornmeal.
- Add 1/2 cup chopped chocolate or 1/4 cup chopped nuts for a special touch.
- Decorate the cake with powdered sugar or icing.
