Ingredients

  • 2 cups of cornmeal

  • 1 cup of wheat flour

  • 1 cup of sugar

  • 1 tablespoon baking powder

  • 3 eggs

  • 1 cup of milk

  • 1/2 cup of oil

Directions

  • Preheat the oven to 180°C (350°F).
  • Grease and flour a 23cm (9 inch) cake tin.
  • In a large bowl, mix the cornmeal, wheat flour and baking powder.
  • In another bowl, mix the sugar, oil, milk and eggs.
  • Pour the liquid ingredients over the dry ingredients and mix until well combined.
  • Do not overmix.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before unmolding.

Notes

  • For a fluffier cake, use fine cornmeal.
  • Add 1/2 cup chopped chocolate or 1/4 cup chopped nuts for a special touch.
  • Decorate the cake with powdered sugar or icing.
