Simple Cornmeal Cake

A simple cornmeal cake is a cake made with cornmeal, wheat flour, sugar, milk, oil, eggs, baking powder and salt. Cornmeal is a fine cornmeal that gives the cake a soft, fluffy texture. The cake is usually baked in a cake pan and served with butter, jam or syrup.

Here is a recipe for a simple cornmeal cake:

Ingredients

  • 2 cups of cornmeal

  • 1 cup wheat flour

  • 1 cup of sugar

  • 1 cup of milk

  • 1/2 cup oil

  • 3 eggs

  • 1 tablespoon powdered yeast

  • 1/2 teaspoon of salt

Directions

  • Preheat oven to 350 degrees F (175 degrees C). 
    Grease and flour a 30 cm cake tin.
  • In a large bowl, mix the cornmeal, flour, sugar, milk, oil, eggs and yeast. 
    Mix until smooth.
  • Add salt and mix again.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before serving.

Notes

  • For a fluffier cornmeal cake, beat the eggs and sugar until light and fluffy.
  • Add 1/2 cup shredded coconut or 1/2 cup chopped chocolate to the batter for a tastier cake.
  • Serve the cornmeal cake with butter, jam or syrup.
