Ingredients
500g peeled and cleaned shrimp
500g cassava, peeled and cut into pieces
2 tablespoons of olive oil
2 tablespoons of palm oil
1 medium chopped onion
2 minced garlic cloves
1 chopped tomato
1 chopped green pepper
1 glass of coconut milk (200ml)
1 tablespoon tomato paste
Salt to taste
1 lemon juice
Black pepper to taste
Chopped fresh cilantro for garnish
Directions
- In a large pot, cook cassava in boiling water until soft enough to mash.
- Run the water and book.
- In another pan, heat the palm oil and olive oil over medium heat.
- Add the onion, garlic, bell pepper and tomato.
- Sauté for a few minutes until the vegetables are soft.
- Add the prawns to the pan and cook for about 5 minutes, until they are pink and cooked through.
- Meanwhile, mash the cooked cassava with a fork or potato masher until it forms a puree.
- Add the cassava puree to the pan with the prawns and vegetables.
- Stir well so that the ingredients are incorporated.
- Then add the coconut milk, tomato paste and lemon juice.
- Season with salt and pepper to taste.
- Mix everything and cook over low heat for another 10 minutes, stirring occasionally.
- Taste the bobó and adjust the seasoning if necessary.
- If it’s too thick, add a little water to make it creamier.
- Remove from the heat and serve the shrimp bobó hot, sprinkled with chopped fresh cilantro on top.
- Accompany with white rice and farofa, if desired.
