Ingredients
500g medium shrimp, cleaned and shelled
2 medium onions, cut into rings
3 garlic cloves, chopped
4 ripe tomatoes, skinned and seeded, chopped
1 red pepper, seedless, chopped
1/2 cup of palm oil
1/2 cup coconut milk
Salt and black pepper to taste
Directions
- Season the shrimp with salt and black pepper.
- In a large pan, heat the palm oil and sauté the onion until it becomes transparent.
- Add the garlic and sauté for another 1 minute.
- Add the tomatoes and pepper and sauté for another 5 minutes.
- Add the shrimp and sauté for another 5 minutes.
- Add the coconut milk and cook for another 5 minutes, or until the shrimp are cooked.
- Adjust the salt and black pepper and serve immediately.
