Shrimp moqueca is a creamy and tasty dish, with a touch of acidity from the lemon and a slight heat from the pepper. 
It is a perfect dish to be served as a main dish or as a starter.

Ingredients

  • 500g medium shrimp, cleaned and shelled

  • 2 medium onions, cut into rings

  • 3 garlic cloves, chopped

  • 4 ripe tomatoes, skinned and seeded, chopped

  • 1 red pepper, seedless, chopped

  • 1/2 cup of palm oil

  • 1/2 cup coconut milk

  • Salt and black pepper to taste

Directions

  • Season the shrimp with salt and black pepper.
  • In a large pan, heat the palm oil and sauté the onion until it becomes transparent.
  • Add the garlic and sauté for another 1 minute.
  • Add the tomatoes and pepper and sauté for another 5 minutes.
  • Add the shrimp and sauté for another 5 minutes.
  • Add the coconut milk and cook for another 5 minutes, or until the shrimp are cooked.
  • Adjust the salt and black pepper and serve immediately.
