Ingredients
2 cups of wheat flour
3 eggs
1 cup of milk
1/2 cup of oil
1 tablespoon baking powder
1 cooked and shredded chicken breast
1 chopped onion
2 cloves of garlic, chopped
1 chopped tomato
1/2 chopped pepper (optional)
1/2 cup green corn (optional)
1/2 cup peas (optional)
Salt and pepper to taste
200g grated mozzarella cheese
1 tablespoon butter or margarine for greasing
Directions
- Preheat the oven to 180°C.
- Grease a mold with butter or margarine and set aside.
- In a pan, sauté the onion and garlic in oil until golden.
- Add the shredded chicken and sauté for a few more minutes.
- Add the tomato, pepper, corn, peas and season with salt and pepper to taste.
- Cook for a few more minutes and set aside.
- In a bowl, mix the wheat flour, eggs, milk and baking powder until you obtain a homogeneous dough.
- Pour half the dough into the greased pan, spread the chicken filling on top and cover with half the mozzarella cheese.
- Place the rest of the dough on top of the filling, spreading it delicately to cover everything.
- Sprinkle the remaining mozzarella cheese over the dough.
- Bake in the preheated oven for approximately 40 minutes, or until the cake is golden and firm to the touch.
- Remove from the oven, let it cool slightly and unmold.
- Cut into slices and serve hot or cold.
