Ingredients

  • 1 kg of fresh sardines, cleaned and without scales

  • 3 ripe tomatoes, cut into slices

  • 2 large onions, cut into rings

  • 3 garlic cloves, chopped

  • 1 lemon juice

  • 1/2 cup olive oil

  • 1/2 cup of water

  • Salt and pepper to taste

  • 1 bay leaf

  • Chopped parsley and chives to taste

Directions

  • Wash the sardines well under running water and remove the scales
  • Open the sardines, remove the entrails and wash again.
  • Season the sardines with salt, pepper and lemon juice. Leave to marinate for at least 30 minutes.
  • In a pressure cooker, place a layer of onions at the bottom.
  • Add a layer of seasoned sardines.
  • Distribute half of the tomatoes and garlic over the sardines.
  • Repeat layers, ending with a layer of tomatoes and garlic.
  • Drizzle with olive oil and water.
  • Add the bay leaf.
  • Cover the pressure cooker and place over medium heat.
  • Once the pan reaches pressure, reduce the heat to low and cook for about 15 minutes.
  • Turn off the heat and wait for the pressure to release completely before opening the pan.
  • Check the seasoning and adjust if necessary.
  • Sprinkle with chopped parsley and chives before serving.
