Ingredients
1 kg of fresh sardines, cleaned and without scales
3 ripe tomatoes, cut into slices
2 large onions, cut into rings
3 garlic cloves, chopped
1 lemon juice
1/2 cup olive oil
1/2 cup of water
Salt and pepper to taste
1 bay leaf
Chopped parsley and chives to taste
Directions
- Wash the sardines well under running water and remove the scales
- Open the sardines, remove the entrails and wash again.
- Season the sardines with salt, pepper and lemon juice. Leave to marinate for at least 30 minutes.
- In a pressure cooker, place a layer of onions at the bottom.
- Add a layer of seasoned sardines.
- Distribute half of the tomatoes and garlic over the sardines.
