Ingredients
2 large cauliflower heads, cut into florets
3 garlic cloves, sliced
2 tablespoons of olive oil
Salt and pepper
1 lemon, grated and squeezed
½ cup grated parmesan cheese
Directions
- To cut the cauliflower, you first need to cut it in half.
You don’t want to eat the green leaf parts so just ignore them, take the tip of your knife and run it around the edges to cut out all the little florets, and then you can cut the little florets into smaller pieces.
pieces, or cut them too. - So you want to put everything in a baking dish and since my family loves this, let’s make 2 heads of cauliflower.
- Next, you’ll need to cut 3 to 4 cloves of garlic into thin slices, and you want those slices really thin because we’re going to sprinkle them on our cauliflower.
- Drizzle with 2 to 3 tablespoons of extra virgin olive oil.
- Then I like to stir a little so that all the cauliflower has a little oil and those slices of garlic are mixed.
- Then we will season it with a little salt and black pepper.
- We’re going to add a few more ingredients once our cauliflower is roasted, but for now we’re going to bake it in a 425 degree oven for 15 to 20 minutes.
- While it’s baking, you’ll need to zest and squeeze 1 lemon and grate 1/2 cup Parmesan cheese.
Then you’ll want to drizzle with the juice of 1 lemon. - Then sprinkle the lemon zest and, finally, we will sprinkle some of that Parmesan cheese and, if you want, you can return it to the oven for just a few minutes to let the cheese melt.
- Your Roasted Cauliflower is ready!
