Ingredients

  • 2 cups of cooked rice

  • 4 eggs

  • 1 cup of sugar

  • 1 cup of milk

  • 1/2 cup vegetable oil

  • 1 tablespoon powdered yeast

  • 1 teaspoon vanilla essence (optional)

  • Lemon zest (optional)

  • Butter and flour for greasing the mold

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter and flour.
  • In a blender, place the cooked rice, sugar, eggs, vegetable oil, milk, vanilla extract (if using) and lemon zest (if using).
  • Mix until you get a smooth mixture.
  • Then add the baking powder to the blender and pulse quickly just to incorporate it into the dough.
  • Pour the dough into the previously greased mold.
  • Place in the preheated oven and bake for approximately 40 to 45 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes.
  • Then unmold it and let it cool completely on a wire rack.
  • Once cool, the rice cake is ready to be served.
  • You can sprinkle icing sugar on top if desired.
