Ingredients
2 cups of cooked rice
4 eggs
1 cup of sugar
1 cup of milk
1/2 cup vegetable oil
1 tablespoon powdered yeast
1 teaspoon vanilla essence (optional)
Lemon zest (optional)
Butter and flour for greasing the mold
Directions
- Preheat the oven to 180°C and grease a cake tin with butter and flour.
- In a blender, place the cooked rice, sugar, eggs, vegetable oil, milk, vanilla extract (if using) and lemon zest (if using).
- Mix until you get a smooth mixture.
- Then add the baking powder to the blender and pulse quickly just to incorporate it into the dough.
- Pour the dough into the previously greased mold.
- Place in the preheated oven and bake for approximately 40 to 45 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes.
- Then unmold it and let it cool completely on a wire rack.
- Once cool, the rice cake is ready to be served.
- You can sprinkle icing sugar on top if desired.
