Caldo de Costilla is a traditional Colombian soup made with pork ribs, onions, garlic, tomatoes, potatoes, cassava, butter, herbs and spices. It is usually served with rice and/or fried bananas.

Ingredients

  • 1 kg of pork ribs

  • 1 chopped onion

  • 2 minced garlic cloves

  • 2 chopped ripe tomatoes

  • 2 potatoes, peeled and cut into cubes

  • 1 cassava, peeled and cut into cubes

  • 2 tablespoons of butter

  • 2 liters of water

  • Salt and pepper to taste

  • 1 bay leaf

  • 1 sprig of chopped chives

Directions

  • In a large pan, heat the butter and sauté the onion, garlic and tomato until soft.
  • Add the ribs, water, bay leaf and season with salt and pepper to taste.
  • Let it cook for about 1 1/2 hours, or until the ribs are tender and coming loose from the bones.
  • Add the potatoes and cassava and cook for another 20 minutes, or until they are soft.
  • Remove the bay leaf and serve hot, sprinkling chopped chives on top.
  • Serve with rice and fried banana.
