Caldo de Costilla is a traditional Colombian soup made with pork ribs, onions, garlic, tomatoes, potatoes, cassava, butter, herbs and spices. It is usually served with rice and/or fried bananas.

Ingredients
1 kg of pork ribs
1 chopped onion
2 minced garlic cloves
2 chopped ripe tomatoes
2 potatoes, peeled and cut into cubes
1 cassava, peeled and cut into cubes
2 tablespoons of butter
2 liters of water
Salt and pepper to taste
1 bay leaf
1 sprig of chopped chives
Directions
- In a large pan, heat the butter and sauté the onion, garlic and tomato until soft.
- Add the ribs, water, bay leaf and season with salt and pepper to taste.
- Let it cook for about 1 1/2 hours, or until the ribs are tender and coming loose from the bones.
- Add the potatoes and cassava and cook for another 20 minutes, or until they are soft.
- Remove the bay leaf and serve hot, sprinkling chopped chives on top.
- Serve with rice and fried banana.
