Queijadinha is a traditional Brazilian sweet, made with grated coconut, cheese and eggs. It is a creamy and tasty sweet, with a crunchy crust.

Queijadinha originates from Portugal, but was adapted to the Brazilian palate with the inclusion of grated coconut. 
The sweet is popular throughout Brazil, and is served as a dessert or snack.

Ingredients

  • 2 cups of grated coconut (tea)

  • 2 whole eggs

  • 1/2 cup (tea) of water

  • 1 can of condensed milk

  • 50 grams of grated parmesan cheese

Directions

  • In a bowl, mix the grated coconut and water. 
    Reserve.
  • In another bowl, beat the eggs and condensed milk until smooth.
  • Add the reserved grated coconut and mix well.
  • Lastly, add the grated Parmesan cheese and mix gently.
  • Pour the dough into cheese molds greased and sprinkled with wheat flour.
  • Place in a medium oven, preheated to 180 degrees, for about 30 minutes or until golden.
  • Leave to cool before unmolding.
