Ingredients

  • 250g wheat flour

  • 1 teaspoon of salt

  • 150g of ice water

  • 50g melted butter

  • 175g cold block butter

Directions

  • Mix your flour with the salt on your countertop;
  • Open a space in the middle;
  • Add cold water;
  • Mix a little of the flour with the water (keeping the circle);
  • Add melted butter;
  • Stir in all the flour;
  • Form a square with the dough;
  • Make an X mark on the dough (up to half);
  • Cover with plastic film;
  • Take to the fridge for 30 minutes to 1 hour;
  • Place the chilled butter between 2 plastic wraps;
  • With a rolling pin, shape a square equal to the dough;
  • Take to the fridge for 30 minutes to 1 hour;
  • Flour your countertop;
  • Place the dough on the bench with the X facing up and open with a rolling pin;
  • Add the butter to the middle of the dough and fold the ends of the dough over the butter;
  • Open the dough lengthwise only;
  • Remove excess flour from the dough using a brush;
  • Fold 1/3 of the dough and shake off excess flour;
  • Fold once more and remove excess flour;
  • Open the dough again and fold by repeating the process;
  • Engage in a plastic film;
  • Take it to the fridge for at least 30 minutes;
  • Open the dough and fold 2 more times;
  • Take it to the fridge for at least 30 minutes;
  • Open the dough and fold 2 more times (there are 6 turns in total);
  • Your puff pastry is ready!
