Ingredients
1 kg of potatoes
1 big onion
4 eggs
Salt and olive oil to taste
Directions
- Start by cooking the potatoes in boiling water for about 20 minutes, or until they are tender.
- Then remove them from the water, peel them and cut them into thin slices.
- Then chop the onion and fry it in a large skillet with a little olive oil until it is soft.
- Add the potato slices and fry for another 5-10 minutes, stirring occasionally.
- When the potatoes are cooked, beat the eggs in a bowl and season with salt to taste.
- Add the potatoes and onion to the bowl with the eggs and mix well.
- Pour the mixture back into the skillet and cook over medium heat until the tortilla is browned underneath.
- Then carefully turn it over with the help of a plate or lid and cook for a few more minutes until it is golden on top too.
