minutesIt is a simple dish, but very tasty and nutritious. The meat, usually chuck or muscle, is slowly cooked in a sauce of onion, garlic and tomato, until it is tender and juicy. The potatoes are added at the end of cooking, so that they do not become too soft.
Ingredients
1 kg of beef or muscle cut into cubes
2 tablespoons of oil
1 chopped onion
2 cloves of minced garlic
1 chopped tomato
1 bay leaf
Salt and black pepper to taste
1 kg of diced potatoes
Directions
- In a pressure cooker, heat the oil and sauté the onion and garlic until golden.
- Add the meat and sauté for another 10 minutes, or until golden brown.
- Add the tomato, bay leaf, salt and black pepper to taste.
- Pour in enough water to cover the meat.
- Close the pressure cooker and cook for 30 minutes, or until the meat is tender.
- Release the pressure from the pan and add the potatoes.
- Cook for another 10 minutes, or until the potatoes are tender.
- Serve hot.
Notes
- For a more intense flavor, you can add some cumin, paprika, or chili pepper to the sauce. You
can also add other vegetables to the dish, such as carrots, green beans, or chayote.
If you don’t have a pressure cooker, you can cook the meat in a regular pot for about 2 hours, or until it’s tender.
