Empadão is a typical dish of Brazilian cuisine, made with wheat flour dough and a filling of meat, chicken, vegetables or cheese. It is a very versatile dish, which can be served as a starter, main course or snack.

Casserole is an easy dish to make and is a great option for a family lunch or dinner. 
It’s also a freezer-friendly dish, so you can prepare a large batch and enjoy it for days.

Ingredients

  • 1 egg yolk

  • 500 g of wheat flour

  • 250 g cold butter

  • 1 tablespoon of ice water

  • 1 kg cooked and shredded chicken breast

  • 1 chopped onion

  • 2 cloves of garlic, chopped

  • 1 chopped tomato

  • 1 can of tomato sauce

  • 1 can of green corn

  • Chopped green chili to taste

  • Salt and pepper to taste

  • Egg yolk for brushing

  • Mozzarella cheese to taste

Directions

  • In a bowl, mix the wheat flour and cold butter until it forms crumbs.
  • Add the egg yolk and ice water and mix until a homogeneous dough forms.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • In a pan, sauté the onion and garlic in olive oil until golden.
  • Add the chicken, tomato, green corn, tomato sauce, salt, pepper and green chilli.
  • Mix well and cook for another 5 minutes.
  • Preheat the oven to 200°C.
  • Roll out the dough with a rolling pin and line a mold with a removable bottom.
  • Distribute the filling over the dough.
  • Cover with mozzarella cheese and brush with egg yolk.
  • Bake for 30 minutes or until golden.
