
Empadão is a typical dish of Brazilian cuisine, made with wheat flour dough and a filling of meat, chicken, vegetables or cheese. It is a very versatile dish, which can be served as a starter, main course or snack.

Ingredients
1 egg yolk
500 g of wheat flour
250 g cold butter
1 tablespoon of ice water
1 kg cooked and shredded chicken breast
1 chopped onion
2 cloves of garlic, chopped
1 chopped tomato
1 can of tomato sauce
1 can of green corn
Chopped green chili to taste
Salt and pepper to taste
Egg yolk for brushing
Mozzarella cheese to taste
Directions
- In a bowl, mix the wheat flour and cold butter until it forms crumbs.
- Add the egg yolk and ice water and mix until a homogeneous dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a pan, sauté the onion and garlic in olive oil until golden.
- Add the chicken, tomato, green corn, tomato sauce, salt, pepper and green chilli.
- Mix well and cook for another 5 minutes.
- Preheat the oven to 200°C.
- Roll out the dough with a rolling pin and line a mold with a removable bottom.
- Distribute the filling over the dough.
- Cover with mozzarella cheese and brush with egg yolk.
- Bake for 30 minutes or until golden.
