Pesto sauce

You can mix it with cooked pasta, use it as a salad dressing or even as a side dish for grilled meats.
Store in an airtight container in the refrigerator for up to a week.
Ingredients
1/2 cup grated parmesan cheese
2 cups fresh basil leaves
3 cloves of garlic
1/3 cup pine nuts (or walnuts if you prefer)
Salt to taste
1/2 cup extra virgin olive oil
Directions
- Wash the basil leaves well and dry them with a paper towel.
- In a food processor, add the basil leaves, Parmesan cheese, pine nuts and garlic.
- Pulse a few times to grind the ingredients.
- With the processor still running, gradually add the olive oil in a thin stream.
- Continue processing until you get a smooth consistency.
- Taste the sauce and add salt as needed.
- If you prefer a more liquid pesto sauce, you can add a little more olive oil.
