Pesto sauce

You can mix it with cooked pasta, use it as a salad dressing or even as a side dish for grilled meats. 
Store in an airtight container in the refrigerator for up to a week.

Ingredients

  • 1/2 cup grated parmesan cheese

  • 2 cups fresh basil leaves

  • 3 cloves of garlic

  • 1/3 cup pine nuts (or walnuts if you prefer)

  • Salt to taste

  • 1/2 cup extra virgin olive oil

Directions

  • Wash the basil leaves well and dry them with a paper towel.
  • In a food processor, add the basil leaves, Parmesan cheese, pine nuts and garlic.
  • Pulse a few times to grind the ingredients.
  • With the processor still running, gradually add the olive oil in a thin stream.
  • Continue processing until you get a smooth consistency.
  • Taste the sauce and add salt as needed.
  • If you prefer a more liquid pesto sauce, you can add a little more olive oil.
