Pea soup

Pea soup is a creamy and flavorful soup made with dried peas, garlic, onion, olive oil and vegetable broth. It is a soup rich in nutrients, as it is a good source of proteins, fiber and vitamins.

Pea soup has a bright green color and a mild, sweet flavor. 
The taste is complemented by the flavor of garlic, onion and vegetable broth. 
The texture of the soup is creamy and smooth.

Ingredients

  • 500g dry peas

  • 1 liter of water

  • 2 cloves of garlic, chopped

  • 1 chopped onion

  • 2 tablespoons olive oil

  • 1 cube of vegetable broth

  • Salt and black pepper to taste

Directions

  • Soak the peas in water for at least 6 hours or overnight.
  • Drain the peas and place them in a pan with the water.
  • Place over medium heat and cook for about 30 minutes, or until the peas are soft.
  • Meanwhile, sauté the garlic and onion in olive oil until golden.
  • Add the sautéed to the pan with the peas and cook for another 5 minutes.
  • Dissolve the vegetable broth in the water and add to the pan.
  • Season with salt and black pepper to taste.
  • Serve it hot.

Notes

  • For a creamier soup, you can puree the soup in a blender or food processor.
  • If you want, you can add other ingredients to the soup, such as sausage, bacon or potatoes.
  • You can also serve the soup with croutons, grated cheese or sour cream.
