Ingredients
500g dry peas
1 liter of water
2 cloves of garlic, chopped
1 chopped onion
2 tablespoons olive oil
1 cube of vegetable broth
Salt and black pepper to taste
Directions
- Soak the peas in water for at least 6 hours or overnight.
- Drain the peas and place them in a pan with the water.
- Place over medium heat and cook for about 30 minutes, or until the peas are soft.
- Meanwhile, sauté the garlic and onion in olive oil until golden.
- Add the sautéed to the pan with the peas and cook for another 5 minutes.
- Dissolve the vegetable broth in the water and add to the pan.
- Season with salt and black pepper to taste.
- Serve it hot.
Notes
- For a creamier soup, you can puree the soup in a blender or food processor.
- If you want, you can add other ingredients to the soup, such as sausage, bacon or potatoes.
- You can also serve the soup with croutons, grated cheese or sour cream.
