Ingredients
2 cups of cooked rice
1 cooked and shredded chicken breast
1 can of green corn
1 can of peas
1 medium grated carrot
1 chopped onion
2 minced garlic cloves
1/2 chopped red bell pepper
1/2 chopped green pepper
1 chopped tomato
1 cup grated mozzarella cheese
1/2 cup grated parmesan cheese
1/2 cup mayonnaise
1/2 cup of milk
2 tablespoons of olive oil
Salt and pepper to taste
Chopped parsley to taste
Directions
- Preheat the oven to 180°C.
- In a pan, heat the olive oil and sauté the onion, garlic and peppers until soft.
- Add the shredded chicken and sauté for a few more minutes.
- Add the corn, peas, grated carrots and chopped tomatoes.
Season with salt and pepper to taste.
Cook for a few more minutes until the vegetables are lightly cooked. - In a large bowl, mix the cooked rice, the chicken and vegetable stew, the grated mozzarella cheese, the mayonnaise, the milk and the chopped parsley.
Stir well to combine all ingredients. - Transfer the mixture to a refractory greased with olive oil.
- Sprinkle the grated Parmesan cheese over the rice.
- Place in the preheated oven and bake for about 30 minutes, or until the cheese is golden brown and bubbly.
- Remove from oven and let rest for a few minutes before serving.
