Ingredients
2 cups of white rice
2 tablespoons of olive oil
1 chopped onion
2 minced garlic cloves
1 cups chopped fresh parsley
1 cup of peas
2 cups of hot water
salt to taste
Chopped fresh cilantro (optional)
Directions
- Heat the oil in a large pan and add the onion and garlic.
- Sauté until soft and golden.
- Add the rice and sauté for 1 to 2 minutes, until lightly browned.
- Add parsley, peas, hot water and salt.
- Mix well.
- Cover the pan and cook over low heat for about 20 minutes, or until the water is completely absorbed and the rice is tender.
- Remove from heat and let rest for 5 minutes.
- Mix with a spoon and add the chopped cilantro.
- Serve hot with tacos, enchiladas or other Mexican dishes.
