Mayonnaise Salad

Mayonnaise salad is a traditional dish of Brazilian cuisine, which is made with a mixture of cooked vegetables, mayonnaise and seasonings. It is a versatile dish, which can be served as an accompaniment to meat, chicken or fish, or as a main dish.

Brazilian mayonnaise salad is usually made with potatoes, carrots, peas, corn and onions. 
The vegetables are cooked until soft, then they are cut into cubes or slices and mixed with mayonnaise. 
The most common seasonings are salt, pepper, oregano and lemon.

Ingredients

  • Mayonnaise to taste

  • 4 medium potatoes

  • 3 medium carrots

  • 1 can of peas

  • 1 can of corn

  • 1 medium onion

  • Salt to taste

  • Pepper to taste

  • Oregano to taste

  • Lemon to taste

Directions

  • Cook potatoes and carrots in boiling salted water until tender.
  • Drain the vegetables and let cool.
  • Cut the vegetables into cubes or slices.
  • Add the peas, corn and onion to the vegetable mixture.
  • Season with salt, pepper, oregano and lemon to taste.
  • Add mayonnaise and mix until uniform.

Notes

  • For a creamier mayonnaise salad, use homemade mayonnaise.
  • You can add other vegetables to the salad, such as tomatoes, cucumber or chayote.
  • To give it a special touch, add some chopped green chilli to the salad.
