Ingredients
3 eggs
500g grated cassava
1/2 cup of milk
1 cup of sugar
1/2 cup coconut milk
1/4 cup melted butter
1 tablespoon powdered yeast
1 pinch of salt
Grated coconut for sprinkling (optional)
Directions
- Preheat the oven to 180°C and grease a round mold with butter and flour.
- In a large bowl, mix the grated cassava, eggs and sugar until you get a homogeneous mass.
- Add the coconut milk, milk and melted butter to the cassava mixture.
- Stir well until all ingredients are incorporated.
- Add the baking powder and salt.
- Mix gently.
- Pour the batter into the prepared pan, spreading it out evenly.
- Place in the preheated oven and bake for approximately 45 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
- Remove the cake from the oven and let it cool for a few minutes in the pan.
- Then unmold it and let it cool completely on a wire rack.
- If desired, sprinkle grated coconut over the cake before serving.
