Madeira Sauce

Madeira sauce is a classic and flavorful sauce, usually served on grilled or roasted meats. It is made with red wine, mushrooms and a touch of butter for creaminess.

Here is a basic Madeira sauce recipe:

Ingredients

  • 1 cup dry red wine (preferably a quality wine as it will influence the flavor of the sauce)

  • 1/2 cup beef broth (can be homemade or concentrated beef broth dissolved in water)

  • 1/2 cup sliced ​​mushrooms (fresh or canned)

  • 1 tbsp flour (optional, to thicken the sauce)

  • 2 tablespoons unsalted butter

  • Salt and pepper to taste

Directions

  • In a skillet or large pot, melt 1 tablespoon butter over medium heat.
  • Add the sliced ​​mushrooms to the skillet and cook until they are soft and golden.
  • Remove the mushrooms from the skillet and set aside.
  • In the same skillet, pour the red wine and bring to a boil over medium-high heat.
  • Let the wine cook for a few minutes to reduce and concentrate the flavors.
  • Add the beef broth to the skillet and continue to cook for a few more minutes, stirring occasionally.
  • If you want a thicker sauce, you can add 1 tablespoon all-purpose flour to the remaining 1 tablespoon butter in a small bowl.
  • Mix well to form a paste. 
    Add the butter and flour paste to the skillet with the wine and broth, stirring quickly to avoid lumps. 
    Cook for a few more minutes until the sauce thickens.
  • Add the browned mushrooms back to the skillet and toss them into the sauce.
  • Season the Madeira sauce with salt and pepper to taste.
  • Cook the sauce for a few more minutes to incorporate all the flavors.
