Ingredients
- 250g of pasta (penne, screw, tie, etc.) 
- 1/4 cup sour cream (optional, to make it creamier) 
- 1 cup of mayonnaise 
- 1 large grated carrot 
- 1/2 small red onion, chopped 
- 1/2 red bell pepper, chopped 
- 1/2 yellow bell pepper, chopped 
- 1/2 cup black or green olives, sliced 
- Parsley or green onions to taste, chopped 
- Salt and pepper to taste 
Directions
- Cook the pasta: In a large pot, bring water to a boil and add a pinch of salt.
- Cook the pasta according to package directions until al dente.
- Run and book.
- Preparing the vegetables: While the pasta is cooking, chop the carrots, onions, peppers, olives and fresh herbs.
- Preparing the sauce: In a large bowl, combine the mayonnaise, sour cream (if using), and chopped vegetables.
- Mix well until all ingredients are combined.
- Combining the ingredients: Add the cooked pasta to the bowl with the sauce and vegetables.
- Mix carefully so that the sauce envelops all the pasta and the ingredients are evenly distributed.
- Season: Season the macaroni with salt and pepper to taste. 
 Remember to taste and adjust seasonings as needed.
- Chill: Cover bowl with plastic wrap or transfer macaroni to a container with a lid.
- Chill in the fridge for at least 1 hour before serving to allow the flavors to meld and the macaroni to chill.
- Serve: Remove the macaroni from the fridge and serve as a side dish with your meals.
