To prepare your Lemon Cake, use the ingredients mentioned and follow the step-by-step instructions below.

Ingredients

  • 1 and 1/2 cups wheat flour

  • 3 eggs

  • 1 cup of sugar

  • 1/2 cup lemon juice

  • 1/2 cup vegetable oil

  • 1 tablespoon powdered yeast

  • zest of 2 lemons

  • Syrup
  • 3 tablespoons of lemon juice

  • 1/2 cup icing sugar

Directions

  • Preheat the oven to 180°C (medium temperature).
  • Unite a form of cake with butter and wheat flour.
  • In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  • Add lemon juice, vegetable oil and lemon zest to the egg-sugar mixture.
  • Mix well.
  • Add the sifted wheat flour little by little, stirring gently to incorporate the ingredients.
  • Do not overmix as this will make the cake heavy.
  • Add the baking powder and gently mix until well incorporated into the dough.
  • Pour the batter into the greased tin and bake in the preheated oven for approximately 30 to 35 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
  • While the cake bakes, prepare the syrup: in a small bowl, mix the icing sugar with the lemon juice until you get a homogeneous consistency.
  • Remove the cake from the oven and let it cool for a few minutes.
  • Make holes in the surface of the cake with a fork and pour the syrup over it.
  • Let the cake cool completely before unmolding.
