Leek Quiche

Leek quiche is a classic French dish made with puff pastry or shortcrust pastry filled with sautéed leeks, eggs, cream and cheese.

Leek quiche is a tasty and versatile option that can be served as a starter, main course or snack.

Ingredients

  • 2 cups (tea) of wheat flour

  • 100 g cold butter

  • 1/2 cup (tea) of cream

  • 1 teaspoon salt

  • 2 stalks of leeks

  • 2 tablespoons of butter

  • 1/2 cup (tea) of wheat flour

  • 300 ml of milk

  • 4 eggs

  • 100 g grated parmesan cheese

  • Salt and black pepper to taste

Directions

  • In a bowl, mix the flour, butter and salt.
  • Add the cream and mix until a homogeneous dough forms.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Wash and chop the leek into thin slices.
  • In a pan, melt the butter and sauté the leek for 5 minutes, or until wilted.
  • Add the flour and mix well.
  • Pour in the milk little by little, stirring constantly until it thickens.
  • Remove from heat and let cool.
  • In a bowl, beat the eggs with the Parmesan cheese.
  • Add the leek filling and mix well.
  • Preheat the oven to 180°C.
  • Roll out the dough and line a quiche pan.
  • Pour the filling into the dough.
  • Bake for 30 minutes, or until golden brown.
