Ingredients
2 tablespoons of tapioca (or tapioca gum)
2 eggs
Salt to taste
1 tablespoon grated cheese (optional)
Stuffing of your choice (cheese, ham, shredded chicken, vegetables, etc.)
Directions
- In a bowl, beat the eggs until well blended.
- Add tapioca, grated cheese (if using) and salt.
- Mix everything until you get a homogeneous mass.
- Heat a nonstick skillet over medium heat.
- Pour the batter into the hot skillet, spreading it out evenly to form a disk.
- Let it cook for a few minutes until the underside is firm and starts to disgrace from the skillet.
- With the help of a spatula, turn the crepioca to cook the other side.
- If desired, add the filling of your choice over half of the crepioca before folding it in half.
- Let it cook for a few more minutes until the filling melts (if it is cheese) and the crepioca is lightly golden.
- Remove the crepioca from the skillet and serve hot.
