Indian Cake

Indian cake is a light and fluffy cake with a characteristic cinnamon flavor. It is a traditional cake from India, but it is also very popular in Brazil.

Indian cake can be served plain or with filling and topping. 
The most common filling is dulce de leche, but chocolate cream, hazelnut cream or another filling of your choice can also be used. 
The topping can also be chocolate, icing or another topping of your choice.

Ingredients

  • 8 egg whites

  • 6 egg yolks

  • 100 g of butter

  • 1 and 1/2 cup (tea) sugar

  • 2 cups (tea) of breadcrumbs

  • 1 tablespoon of cinnamon powder

  • 1 tablespoon of baking powder

Directions

  • Beat the egg whites and set aside.
  • In a mixer, beat the egg yolks, sugar and butter until creamy.
  • Add the cinnamon and breadcrumbs and mix well.
  • Gently fold in the egg whites.
  • Pour the dough into a greased and floured pan.
  • Bake in a preheated oven at 180°C for about 30 minutes.
