4 salmon fillets
1/4 cup lemon juice
2 tablespoons of olive oil
Salt and pepper to taste
1/2 cup grated carrot
1/2 cup grated zucchini
1/2 cup of cooked broccoli
2 tablespoons of chopped olives
Directions
- Preheat the grill or a large skillet over medium-high heat.
- In a small bowl, combine lemon juice, olive oil, salt and pepper.
- Place the salmon fillets in a large bowl and drizzle with the lemon mixture.
- Let it marinate for about 15 minutes.
- In a large bowl, combine carrots, zucchini, broccoli and olives.
- Season with salt and pepper to taste.
- Place the salmon fillets on the grill or skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown.
- Meanwhile, heat a pan over medium heat and add the vegetables.
- Cook for about 5 minutes, or until they are tender.
- Serve the salmon with the hot vegetables.
