Ingredients

  • 4 salmon fillets

  • 1/4 cup lemon juice

  • 2 tablespoons of olive oil

  • Salt and pepper to taste

  • 1/2 cup grated carrot

  • 1/2 cup grated zucchini

  • 1/2 cup of cooked broccoli

  • 2 tablespoons of chopped olives

Directions

  • Preheat the grill or a large skillet over medium-high heat.
  • In a small bowl, combine lemon juice, olive oil, salt and pepper.
  • Place the salmon fillets in a large bowl and drizzle with the lemon mixture.
  • Let it marinate for about 15 minutes.
  • In a large bowl, combine carrots, zucchini, broccoli and olives.
  • Season with salt and pepper to taste.
  • Place the salmon fillets on the grill or skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown.
  • Meanwhile, heat a pan over medium heat and add the vegetables.
  • Cook for about 5 minutes, or until they are tender.
  • Serve the salmon with the hot vegetables.
