Ingredients
3 ears of green corn
1/2 cup of cornmeal
1 cup wheat flour
3 eggs
1/2 cup vegetable oil
1 cup of sugar
1 tablespoon powdered yeast
1 pinch of salt
Directions
- Preheat the oven to 180°C and grease a cake tin with butter or vegetable oil.
- Remove the corn kernels from the cobs.
- In a blender, beat the corn kernels with the eggs until you get a homogeneous mixture.
- In a large bowl, add the whipped corn mixture, sugar and vegetable oil.
- Mix well.
- Add the wheat flour, cornmeal and salt to the bowl.
- Mix until all ingredients are incorporated.
- Lastly, add the baking powder and mix gently.
- Pour the dough into the greased form and place in the preheated oven.
- Bake the cake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes.
- Then unmold and cool completely on a wire rack.
- Serve the green corn cake in slices and enjoy!
